Winemaking: Picked by hand into small, 10kg cases allowing the fruit to arrive at the ting table intact. The fruit is gently foot crushed to release some juice and left on its skins to macerate up to 48 hours. All fruit was whole bunch pressed over 3 hours and run, by gravity, into settling tanks. 12 hours of settling is passed after which the juiceis racked, retaining fine lees, into a horizontal fermentation tank.
Tasting Notes: Smells sweet but not bubblegummy and cartoony, more Turkish market spice and rosewater bath in the most refined, evocative sense. Succulent in texture, concentrated flavours but again, a ripple of chalky texture, bright core of mixed-minerally acidity, a chew to finish and this beautiful, lingering, fresh sweetness. Candied almonds, dried citrus peel, green apple, faint nutty characters. Just wonderful. Such an intriguing, beautiful wine, and with so much future potential. Extraordinary.
